Higher Prices

Since the price of gas has skyrocketed, and everything else has gone up, I decided to start making my own bread and jelly.

(This recipe is good for bread, rolls, bread sticks, and pizza crust.)

Whole Wheat Pizza Dough

1 T active dry yeast
1/4 c warm water
1 t honey
3/4 c cold water
1 T olive oil
1/2 t sea salt
1 c whole wheat flour
1 3/4 to 2 c unbleached all-purpose flour

In a bowl, stir yeast & warm water together, add honey, and set aside for 10 mins or until foamy.

In a glass measuring cup, combine cold water, oil and salt. Add to yeast mixture.

In food processor, combine whole wheat flour and 1 3/4 cup of unbleached flour in the bowl. With motor running, add liquid mixture in a steady stream and process for about 15 seconds or until well combined. Gradually add enough of remaining white flour until mixtures forms a ball, and then knead by processing for 20 seconds.

Put dough in lightly oiled bowl and turn to coat with oil.

Let dough rise, covered loosely with plastic wrap or towel, in a draft free place for 45 minutes to 1 hour or until doubled.

Punch down dough, roll out on a whole wheat floured surface to fit a 14 inch pizza pan that has been sprinkled with cornmeal.

Bake crust only for 10 minutes at 375 degrees, remove from oven and add sauce and other toppings.

Bake pizza for 30 minutes or until golden brown.

(For bread, just take out of processor and put in bread loaf pans to rise then bake. For rolls take out of processor and shape into rolls to rise and bake.)

(For pizza toppings I use tomatoes, onions, bell peppers, and whatever else I have in the way of veggies)

Jelly Recipe

In a blender mix a chopped up mango, T. of honey and a little orange juice to make it the desired consistency. You may try this with any fruit. I made some with one mango, one nectarine and a banana and it was equally as good.

Spread on toast and enjoy!
